Evaluating Restaurant Site Controls for Operations, Cash Handling, and Compliance
This tool contains two work program samples that highlight best-practice steps auditors can use for reviewing a number of functions at a restaurant site.
Sample testing procedures include setting up a disk subdirectory for the audit; titling the subdirectory by market name, including all computer files pertaining to the audit under the subdirectory; obtaining the prior month's deposit tickets and verifying that deposits were made daily; observing one morning's bank deposit preparation and verifying that there are no personal checks; and observing one night's and one morning's reserve fund verification and documenting who performed the count.
